How do I cook the sweetness out of the ham?

This question was asked of me today.  Remember when ham is baked, it may be delicious, if not overcooked, but the juices are more concentrated.  I prefer to boil a ham, as alot of salt is cooked out of it.  Here again, since ham is already cooked, you are basically heating it up. I would think the same process would reduce the sweetness, as well.  Meanwhile, don’t buy Honey Cured Ham, etc.

Dear Anonymous,

I will look for a recipe for the above.  However, some of my cookbooks have been given away, as I am trying to down size.  My guess would be to follow either one of the bean soup recipes & substitute dried string beans which have been soaked over night.  Or the Ham, string bean, & potato main dish that I have included in my list.  I am overhauling the recipe page, so I will see what I can find for you.  Thank you for asking!

Dear Anonymous,

Dried beans are usually better, if soaked over night in cold water.  It softens the outside shell, but also cuts the cooking time of beans.  I have also added canned beans, which are already cooked.  If you need a little more flavor & aren’t using a ham bone, get the dried beans that include a flavor package in them.

What is weeping edema or information on it?

Dear Anonymous,

Your question raised this morning about weeping edema, I shall try to answer.  I would suspect that it is edema with cellulites.  These blister like pockets, often break open & weep!  You really have to watch for infection & not scratch anything.
